Mediterranean Fish in a Bag (version 2)!

Remember that foil bagged fish recipe I posted some time ago? Here's a delicious twist to the basic recipe, which I feel has a decidedly Asian taste to it.

You just add three other ingredients and you have an entirely new dish! To the basic recipe, add the following, and wrap up in your foil bag:

  • the meat of a fresh young coconut (buco, what people call as malauhog or the younger and not too firm meat)

  • 3 teaspoons of turmeric

  • 1/2 teaspoon red pepper (optional)


This tastes so good with freshly steamed rice! The coconut meat adds a mellow taste and along with the turmeric it has an earthy taste. If you are adventurous, you can up the red pepper a bit and it becomes a fish curry in its own right.
