Anko, or red bean paste, is made red bean or azuki. Because I really like mochi, I decided to try making some anko paste with the intent of making red bean mochi. Alas, that didn't happen.
But I ended up trying this recipe and stocked the anko in the fridge. Here, I've smeared it on our weekend pancakes. Yum!
The flavour and that lovely burgundy colour ... it reminds me of sweltering hot Philippine summers, lounging around with ice buko with munggo (coconut ice pops with red mung beans).
