Work recently brought me to Palawan, home of the UNESCO Heritage Site, the Underground River and great beaches. It's seafood paradise!
If you are staying over at a friend's, a quick trip to the market will satisfy your seafood penchant. Everything is fresh, and freakishly cheap (as compared to Manila prices). Fresh ingredients prepared simply so that their natural charm shines through makes for some of the best meals.
Take a look at one of our office meeting spreads. Sinigang na isda or fish in a sour soup. Halabos na hipon or blanched shrimp. Tahong or mussels in a gingery broth. Fried tanigue or fish. Some vegetables on the side. Sweet mangoes to finish off the meal. In another meal we had wonderful crabs - the kind you can only get in mangrove areas, with redder shells and thicker claws.
Really, those spoons and forks have little place with this meal.
